Registered Nutritionist (AfN), MSc, BSc, PN nutrition coach

About me

I’m Nicole (Nicki),

Award‑winning Registered Nutritionist (AfN) and certified nutrition coach with 17 years’ experience helping people lose weight in a structured, realistic, and sustainable way.

My approach is grounded in evidence‑based nutrition and behaviour change. I focus on appetite regulation, metabolic health and simple habits - no calorie counting, no tracking apps, no complicated rules. Everything is designed to work in real life: busy jobs, families, stress, travel, and the weeks that don’t go to plan.

Why My Approach Works When Diets Don’t

Most people don’t struggle because they lack discipline. They struggle because hunger, hormones, metabolism, stress, sleep and habits are working against them — often all at once.

My programme addresses these factors step by step and is designed to prevent rebound weight gain (which affects up to 90% of dieters). By improving metabolic health, stabilising appetite and building habits gradually, clients create a way of eating that lasts. Research shows people are four times more likely to reach and maintain their goals when working with a nutrition professional.

“You’re the first nutritionist who actually lives in the real world. You get it — and you make it feel easy.” Lidia, 56

What Makes My Programme Different

Most plans focus only on food. I focus on the full picture: biology, habits, lifestyle and the patterns that have made weight loss difficult in the past.

Each week we build one new habit across areas such as appetite regulation, blood sugar balance, stress, sleep, nutrition quality, strength training, movement and emotional eating. These habits build on each other, making weight loss feel easier over time.

I use a simple hand‑portion method and a healthy plate model so meals are easy to structure without weighing or tracking. Clients are often surprised by how satisfied they feel while still losing weight.

Sessions are confidential, supportive and non‑judgemental. Between sessions, you can choose optional check‑ins for accountability and guidance.

Resources That Make Healthy Eating Easy

Clients often say the resources are one of the most valuable parts of the programme. With the Signature Programme, you’ll receive:

  • Weekly habit modules (clear, simple learning slides)
  • A food journal that updates with each new habit
  • Bespoke recipes tailored to your preferences
  • Supermarket “mix & match” food capsules
  • 100‑page No Counting Method Cookbook
  • Veggie Magic recipe book (comfort foods made from vegetables)
  • No Boring Salad Guide, dressing formulas + salad builder
  • A comprehensive lifestyle + habit tracking system
  • And more tools that make healthy eating feel effortless

💬 What Clients Say

“I would wholeheartedly recommend this programme to anyone looking to make real nutritional changes. I signed up feeling defeated by middle‑aged weight gain, and with Nicki’s support I’ve lost 9 pounds in 8 weeks and feel so much more positive — I’m finally making progress I thought was impossible. The programme is so much more than nutrition — it covers sleep, stress, the right type of exercise and the habits that actually make a difference. I loved the recipe book and the holistic, skills‑based approach. I’ve now signed up for the follow‑on programme.”

 — Emma Marshall,  Aged 59 (March, 2026)

“I’ve lost 12 pounds in 8 weeks and reduced my body fat significantly. Nicole makes nutrition easy to understand, fun, and completely personalised. Her enthusiasm and expert knowledge keep you motivated, and the ongoing support between sessions keeps everything moving in the right direction — even when life gets messy. The menus are real‑world, quick, enjoyable, and tailored to my needs. I’ve now got more energy, feel better mentally, and finally understand the why behind my choices.  I recommend Nicole 100%. Her Programme is worth every penny, which is why I’m continuing even after completing the first round.”
